Fry Saute onion, zucchini and cut up meat or tofu in olive oil in a large skillet until browned. Add 2 cups of water and bok choi stems. Add 2 TBS. soy sauce, 1 TBS. honey, 2 cloves pressed garlic and ½ tsp. grated fresh (or dry) ginger. Stir. Add bok choi leaves. Cover. When just tender, adjust seasoning and serve. If needed, add more water while cooking to make enough sauce to flavor your rice. Garnish with a small handful of raw cashew pieces.
