Easy Refrigerator Pickles:
Slice 4-5 cucumbers about 1/8″ thick into a colander, and toss with a tablespoon of sugar and a generous teaspoon of salt.
Allow to drain for half an hour, then rinse well and drain again.
In a bowl, toss with a tablespoon of your favorite vinegar (apple cider, rice, and white wine vinegars work well — or use one of those flavored vinegars you don’t know what to do with!)
Add a pinch or two of spices or herbs such as coriander, cumin, mustard, and dill seed, whole allspice, pepper corns, fresh dill, and dried red pepper flakes. Experiment with flavors!
Keep refrigerated for up to a week in a closed container.
