Jerusalem Artichokes, also known as Sunchokes, Sunroot, and Earth Apple, are not artichokes and they’re not from Jerusalem! They are a member of the sunflower family and native to North America. They have a mildly nutty-sweet flavor and texture like russet potatoes, retaining the best texture when steamed rather than boiled.

They are high in potassium, iron, niacin, thiamine, phosphorus, and copper.

According to Wikipedia:

The tuber contains about 2% protein, no oil, and little starch. It is rich in the carbohydrate inulin. Tubers stored for any length of time convert their inulin into its component fructose.  Jerusalem artichokes have an underlying sweet taste because of the fructose, which is about one and a half times as sweet as sucrose. Since inulin is not assimilated in the intestine, it doesn’t cause a glycemic spike as potatoes would.

Jerusalem artichoke tubers can be eaten (no need to peel!) raw, cooked, or pickled, and also planted. They will come back every year with a medium sunflower-like plant on a tall stem, and of course, edible tubers.
