Shallots have been described as a cross between onions and garlic, but they have a delicate flavor all their own. Botanically, they are a type of onion, and you can use them in all the ways you use onions, but they have as milder flavor.
We like to use shallots in place of onion or garlic in risotto, or as part of the aromatic base for soups, sauces and stews.
