Wheat berries are nutritional powerhouses — full of protein and fiber! One cup of uncooked wheat berries provides 24 grams fiber and 26 grams protein, plus B vitamins, potassium, and iron.

To cook: put 2 cups water and 1 cup of grain into a pot. Bring to a boil, cover, then let simmer for about 50 minutes, or until wheat berries are soft. Soaking the wheat berries overnight can also help reduce the cooking time by about 10 minutes.

Wheat berries are similar in taste, texture, and nutrition to Farro. Delicious as a side dish, mixed with rice or oats as a breakfast cereal, or milled for flour for baking.
